After picking, the needles and stems of the Aspalathus Linearis plant are laid out directly in the sun to dry quickly. This means that they do not turn copper-colored when exposed to oxygen, but retain their delicate green color.
The typical, sweet Rooibos aroma fades into the background and the taste remains mild and light.
